So the guy behind the meat counter needs to take the word "Butcher" off his hat. I asked for "beef suet" which is the hard fat alongside of the kidney. Its very hard, chunky and dry. He brings me a tray of soft fat they trim off the steaks. A real butcher would have known what I was looking for.

The Festus Schnucks only and I do mean only get the five stars for Tia and Vanessa in the seafood/ maybe deli area. They are exceptional employees going be of and beyond. If you haven't had Tia's fried cod loin with Andy's breading you have too. When the cod loin is on sale nothing is better.
